Quinoa and Black Bean Fajita Boats {Gluten Free and Plant-Based}



I'm apart of a few groups on Facebook that are doing a healthy eating challenge for November.  They have been so encouraging.  I see posts in my newsfeed constantly so I am reminded all the time to make the better choice and that's just what I did for dinner.  Thanks Holly (from My Plant Based Family) and Sarah, because of you I just went and threw away my bag of guilty pleasure brownies I've nibbled on and have {tried} to remember to eat throughout the day.  Ha! 

Dinner tonight was one of my favorites.  I love the combination of quinoa and black beans with fajita veggies.  There is so much flavor, you don't miss all the sour cream and cheese.  This meal is gluten free and plant-based and is packed full of flavor!  I must warn you, they are messy!

Ingredients:

1 cup of uncooked quinoa
2 cups of water
1 can of black beans
1 red pepper
1/2 red onion
1/2 jalapeno
1/2 avocado
1/2 tomato
1 head of romaine
1 teaspoon salt
1 T olive oil

Directions:

1.  Bring 2 cups of water to a boil and add 1 cup of quinoa.  Reduce heat and cover.  Let simmer for 12 minutes.  Turn off the heat and keep covered.
2.  While the quinoa is cooking, warm up black beans.  (I just use the measuring cup I used for the water and put in the microwave, 3 minutes on power level 3)
3.  Slice the red pepper, red onion and jalapeno.  Saute in olive oil over high heat for 3-4 minutes.  Season with salt.
4.  Next prepare the lettuce.  Peel off the outer large leaves and cut off the base.  Place all of the leaves in a strainer and rinse clean.  Pat dry.  I like to use the smaller leaves closer to the center of the head of lettuce. 
5.  Top each leaf with quinoa, black beans fajita veggies, avocado and tomato. 



My husband and I eat a lot of burrito bowls.  It's so easy and the ingredients are fresh and good for you!  Once we made the switch to quinoa we have a hard time going back to rice.  There is just NO flavor to rice.  But quinoa is packed full of flavor and is so good for you.
