Avocado Grilled Cheese



Grilled cheese is a staple in our house for our two year old.  Though he eats them all the time Ryan and I don't very often.  But there was one day when I was busy cooking and taking pictures and Ryan needed nourishment.  I whipped this bad boy up and he was in heaven.  This grilled cheese has sharp cheddar (Ryan's FAVORITE), pepper jack and avocado.  The cheese was so gooey and stringy and the avocado made it even creamier.  It was perfect, just the way you want a grilled cheese to be.   Next time you need something quick but still to satisfy those taste buds, try this avocado grilled cheese!

Ingredients:

sharp cheddar slices
pepper jack slices
avocado slices
2 slices of bread
butter
(I'll let you decide the ratios, but I did about two slices of each cheese and about 1/4 an avocado)

Directions:

1.  Butter one side of each slice of bread.  Layer with cheddar, pepper jack and avocado (butter on the outside of the bread).
2.  Cook on a griddle or skillet on medium heat until light and golden brown.

Note: We have a George Foreman Grill and it makes the perfect grilled cheese every time.
